Carolea extra virgin oil is a typically Calabrian oil. It looks like an oil characterized by a medium-light fruitiness and a delicate sensory profile that make it suitable for even the most refined dishes.

How do you cultivate your olive trees?

In the care of our land we promote the growth of wild herbs, protecting the land from erosion and stimulating greater fertility, through the accumulation of organic substances, determined by the practice of semi-permanent grassing.

What does a sensory examination of the oil consist of?

The sensory examination of the extra virgin olive oil is entrusted to a panel of expert tasters. The glasses used for tastings are blue in color as the color must not influence the taster's judgement. Color is never an indication of good or bad quality. The right temperature that allows the extra virgin olive oil to best release its scents is 28°. The first approach is olfactory and defines the intensity of the fruitiness. Subsequently we move on to the actual tasting which requires some particular techniques such as the "stripping" necessary to better perceive the natural scents present in the oil. Sensory analyzes must always be accompanied by chemical analyzes as some elements are not detectable to taste, one of these is acidity.

What is the best time to harvest?

Our harvest begins in October, when the olives have not yet reached full maturity and the fruits, still green, are richer in biophenols and able to best release the typical scents of the Calabrian cultivated varieties we grow, generous with typically Mediterranean aromas .
