Il Generale

It is the name of the first extra virgin olive oil, linked to a new qualitative vision of the product.

Being the first oil that sanctioned the debut of Tenuta Severini in the world of high quality oils, the choice of the name "Il Generale" given to this oil is determined by emotional reasons, being linked to the profession of Valeria's father.

It is a monovarietal oil of carolea in purity. The carolea is a typically Calabrian variety whose harvest begins during the first weeks of October when our olives are still green and richer in polyphenols. We select the different lots with care and dedication, choosing only those in which the carolea has reached the highest degree of expression, the one most suitable for this Calabrian cultivar, so delicate and elegant.

The resulting oil has a fresh and delicate flavor. On the palate, it looks like a green fruity, of medium intensity, with notes of grass and tomato. Fresh with growing bitterness of artichoke and radicchio. The finish is surprising and exciting, with graceful spicy notes of pepper and chilli pepper that chase each other on the palate cheerfully, recalls the typical dance of the calabrian tarantella.

Clean and moderately persistent, it is suitable for fish dishes as it does not overpower the taste.

However, thanks to its suave and elegant notes, it is suitable for the most sensitive palates and can be used to enhance any dish.
